"I forgot! I'm supposed to bring in food to share for ____ tomorrow. If I don't, then I don't get to participate." None of us wants our teen to be the one sitting in the back of the class while the rest of the students pile multitudes of samplings of food onto their plates to enjoy. Before I discovered The Best Easy Pumpkin Cake Mix Cookies, I would usually respond with something like, "Can't you just bring in cups or forks or napkins?" In my defense, those are all practical contributions and something easy to come up with at ten o'clock at night. After all, how will they indulge without forks? As relieved as I am to get away with simplicity, I usually feel a little guilty for not sending in something the kids will truly enjoy. Napkins are necessary, but certainly not fun or memorable. I have solved the problem, however, by keeping three simple ingredients readily available in my pantry - spice cake mix, canned pumpkin, and cream cheese frosting. Yep, that's it! ONLY THREE INGREDIENTS and you are on your way to being the parent the other kids tell their parents about when asking them to duplicate the recipe. These are now my go-to recipe when I need something special. I have no doubts the mouths they reach will be satisfied. You will be thrilled with how fast and easy it is to make something so wonderful!
These cookies are a favorite of my college boys, so I recently decided to mail them some as a treat for mid-terms. I wasn't sure if they would survive the 700 mile trip to my sons' university, but they were a huge hit and allowed them to indulge in a little taste of home, even though they are far away. One of them mentioned some of the cookies had broken, so I told him that maybe I should just make them when they are home and not mail them next time. He quickly responded with, "No! Please send them again. I just used a fork to eat the pieces and it was great!" That made my Mama heart happy and, of course, I will be mailing them more in the future. T
IP: If you send these scrumptious cookies in the mail, do not put icing on them. Freeze them right up until you are ready to mail them, and then pack them tightly into an airtight container with wax paper between layers. Include a tub of frosting, a plastic knife, and a note of encouragement.

The Best Easy Pumpkin Cake Mix Cookies
Ingredients:
One box spice cake mix
One 15 oz. can of pumpkin
One tub of cream cheese frosting
Preheat oven to 350 degrees Fahrenheit.
Spray cookie sheet with cooking spray - even if using parchment paper.
Mix the spice cake mix with the can of pumpkin using a wooden spoon or mixer.
Spoon tablespoons of dough evenly apart on a cookie sheet. (I use a cookie scoop.)
Bake at 350 degrees for 12 minutes (use clean toothpick test). They do not change spread out or change shape when cooking.
Cool cookies completely, then frost with cream cheese frosting. They are also delicious without the icing.
EASY PEASY!!! And they even contain veggies!
